Pork rib chops with soy sauce and honey

INGREDIENTS

For the pork rib chops

  • 1 kg. pork rib chops
  • 20 gr. garlic, sliced
  • 20 gr. ginger, thinly sliced
  • 40 gr. honey
  • 10 gr. red pepper flakes
  • 5 gr. Sichuan pepper
  • 10 gr. star anise
  • 150 gr. soy sauce
  • 30 gr. white vinegar
  • 300 gr. white wine
  • 400 gr. chicken stock
  • 80 gr. scallions, minced
  • salt
  • pepper
  • olive oil

DIRECTIONS

For the pork rib chops

Heat a saucepan over medium to high heat and add a little olive oil. 

Season the chops with salt and sear them, until they turn a golden brown on all sides.

Add the garlic, the ginger, the honey and the spices and continue cooking until the honey has caramelized.

Pour in the wine and add the soy sauce, the vinegar and the chicken stock. 

Place the pan in the oven at 130-140 degrees C and continue cooking until the chops soften.

Remove from the oven, return to the stove and simmer until the marinade is creamy and smooth.

Serve by sprinkling with the scallions.
