Parmesan and mayonnaise crusted chicken

INGREDIENTS

For the chicken

  • 600 gr. chicken breasts, skinless
  • 150 gr. parmesan, grated
  • 100 gr. toast, grated
  • 220 gr. mayonnaise
  • 5 gr. thyme, leaves stripped and finely chopped

For the tomato sauce

  • 200 gr. tomato concassé 
  • 80 gr. cucumbers, unpeeled, cut into small dice
  • 40 gr. onions, minced
  • 20 gr. caper, minced
  • 10 gr. olive oil
  • 5 gr. white wine vinegar
  • 3 gr. basil, cut into chiffonade
  • salt

For the chicken

Preheat the oven to 180 degrees C.

Combine all the ingredients, except for the chicken, in a bowl.

Place the chicken breasts on a baking parchment paper and coat them with the mayonnaise mixture.

Bake the breasts until they become colored a nice gold. 

For the tomato sauce

Combine all the ingredients and season with salt.

Refrigerate the sauce for about 30 minutes, before serving it.
