Cuttlefish is very popular in Europe and Asia. This mollusk is yellow or beige in color, usually with black stripes. It has 10 tentacles, two or which are very long. Its fresh is very firm and must be beaten before it is cooked. The sepia, or “ink”, is sometimes reserved and used in other recipes.
