A very hard wheat typically milled into semolina, primarily used in making pasta and sometimes bread as it has a high gluten content. Semolina is found in 2 forms coarse and fine. It is traditionally used in Greek cuisine to make halva, a rich dessert flavored with sugar syrup, cinnamon and almonds.
