Star anise is highly regarded by the Chinese. As the name implies it has an anise aroma similar to anise. However, the flavor of its seeds is stronger and sharper than that of aniseed; in fact a few star anise seeds are enough to flavor an entire dish. It is used to season pork, chicken, duck, rice, coffee, and tea. It is one of the spices included in five spice powder.
