              By ‘fiddling’ with the basic ingredients of mayonnaise you can create interesting variations of the mayonnaise sauce. Some examples are given below.
• If you use a mixture of sunflower and sesame oil in a 3/1 ratio and add a good quality vinegar and a little fish stock,
	you can create a very good accompanying sauce for fish with a strong flavor such as salmon.
• By adding a little pesto to the classic recipe,
	you have a pesto-flavored mayonnaise which adds a pleasant, aromatic twist to a prosciutto, mozzarella and tomato sandwich.
• Mayonnaise with mustard, honey and yoghurt,
