RADICCHIO

An Italian red chicory that's used as a salad green. Its brilliant ruby-red leaves have thick, white veins. The leaves form small, round, compact heads. Eaten alone, the fresh leaves are quite bitter and peppery tasting, but when mixed with other greens, radicchio adds a nice accent to salads.
