YELLOW SPLIT PEAS

The dried, peeled and split seeds of a yellow variety of peas. Split peas are less starchy and take less time to cook. Whole dried peas are mainly used in soups, traditionally accompanied by ham. In Greek cuisine they are used to make fava, a delicious spread, served with onions and capers. The split of the island of Santorini are considered to be of superior quality.
