PORK BELLY

A boneless cut of fatty meat derived from the belly of a pig. Pork belly is needs to be sliced thinly and cooked fast over high heat or otherwise it needs to be braised at a really low temperature in order to become tender and succulent. This cut is used to produce bacon and the Greek gyros.
