Eggs can, potentially, contain salmonella and be dangerous for consumption if they are not cooked properly or consumed raw.

For this reason, raw egg yolks should be avoided.

Pasteurized egg yolks and eggs are available in stores and can be used without problems.

Another solution is to heat the eggs in a bain-marie to 70°C so as to pasteurize them.
