FRITTATA

An Italian dish made from beaten eggs that is similar to an omelet. Fror a frittata additional ingredients, such as vegetables, meat or cheese, often are used and the mixture is cooked over low heat until it is set but still moist on top. The frittata is then put under a broiler or allowed to stand in the covered skillet, for several minutes to finish cooking. The frittata is then served in wedges.
