CORN BREAD

A quick bread made with cornmeal and flour that usually has a light and porous texture. Corn bread is commonly made in a square or rectangular pan, but a southern-style variation is baked in a skillet. Corn muffins are made simply by baking the batter in muffin pans. For corn sticks, the batter is baked in heavy shallow metal pans that are shaped like ears of corn. Corn pone is an unsweetened corn bread made without flour. The sweetness level of corn bread varies a bit throughout the country-Southerners tend to like their corn bread less sweet than Northerners. Corn bread mixes are widely available, as are frozen corn muffins.
