ENCHILADA

A classic Mexican recipe that features a corn of flour tortilla rolled around a meat, vegetable or cheese filling. The roll is topped with a cpicy chili tomato sauce or more cheese. Traditionally in Mexico, enchiladas are served as soon as they are assembled, but in the United States, enchiladas often are placed in a baking dish, topped with sauce, and heated through.
