GIAPRAKIA

Traditional food; its preparation involves various vegetable leafs used to wrap rice, meat and herbs. The term comes from the Turkish word "yaprak" which means leaf. There are variations depending on location. Giaprakia made with cabbage leaves stuffed with pork mince is a classic Christmas dish in Macedonia. An interesting variation comes from Symi; here, giaprakia are made using cyclamen leaves stuffed with fava.
