INGREDIENTS

For the brine

  • 2 kg. water
  • 110 gr. salt
  • 75 gr. honey
  • 40 gr. parsley
  • 10 gr. rosemary
  • 25 gr. fresh thyme
  • 20 gr. garlic
  • 15 gr. whole black peppercorns
  • 2 bay leaves

DIRECTIONS

For the brine

Place all ingredients in a pot, bring to the boil and remove from the heat. Allow to cool, strain and store in the fridge.
