INGREDIENTS

For the stock

  • 2,5 kg. cold water
  • 125 gr. white wine vinegar
  • 450 gr. sliced onion
  • 200 gr. sliced carrot
  • 200 gr. sliced celery
  • herbs and spices of you preference

DIRECTIONS

For the stock

Combine all of the ingredients in a stockpot large enough to accommodate them and simmer for 1 hour. Strain the poaching liquid through a fine sieve. It may be used immediately or rapidly cooled and stored for later use.
