INGREDIENTS

For the vegetables brunoise

  • 200 gr. carrot brunoise (small cubes)
  • 200 gr. celeriac brunoise
  • 200 gr. leek brunoise
  • 60 gr. olive oil
  • Salt

DIRECTIONS

For the vegetables brunoise

Heat a frying pan over medium heat, add 1/3 of the olive oil and braise the carrot until soft. Season with salt and place on absorbent paper. Repeat the process with the celeriac and leek. Combine the vegetables and store in the fridge.
