Sautéed French potatoes with thyme, rosemary and garlic

INGREDIENTS

For the dish

  • 1.2 kg. French potatoes
  • 100 gr. olive oil
  • 60 gr. butter
  • Fresh thyme, finely chopped
  • Rosemary, finely chopped
  • Chives, finely chopped
  • 20 gr. garlic oil (see pantry)
  • Salt

DIRECTIONS

For the dish

Place potatoes and 40 gr. olive oil in a baking dish and cover with foil. Bake at 150°C until soft. Allow to cool and cut in half. Place a frying pan over high heat, add remaining olive oil and add potatoes, cut-side down. Sauté until golden brown and add butter. Toss until the butter begins to darken, then add herbs and garlic oil.
