Baked eggs with sausage, feta cheese and peppers

INGREDIENTS

For the eggs with sausage and peppers

  • 20 gr. olive oil
  • 200 gr. potatoes, boiled, broken into small chunks 
  • 40 gr. sujuk sausage, thinly sliced
  • 120 gr. red pepper, cut into medium sticks
  • 8 eggs
  • 80 gr. butter
  • 100 gr. feta cheese, crushed
  • freshly ground black pepper
  • parsley, leaves
  • grilled bread, for serving
  • salt

For the eggs with sausage and peppers

Heat a saucepan over medium to high heat. Add the olive oil and potatoes. 

Season with salt and sauté until golden and crisp.

Brush the potatoes to one side of the saucepan and use the remaining pan to cook the sujuk sausage until lightly browned. 

Remove the sausage and potatoes to a platter using a slotted spoon.

Using the same saucepan, cook the peppers until soft.

Break the eggs into the saucepan, add the butter and cook until the egg white slightly whitens.

Add the potatoes and sausage over the eggs, spreading them across the pan and then top with the feta cheese.

Transfer the pan to a pre-heated oven at 180 degrees C and bake until the egg white thickens and the yolk is thick and runny. 

Remove from the oven, season with salt and pepper and sprinkle with the parsley leaves.

Serve with the grilled bread.
