Pastry cream is used mainly as a filling for very many different types of desserts such as tarts, cakes, éclairs, Napoleons, etc.

It is also used as a base for authentic soufflés, i.e., those which do not contain any flour or rising agents in the mixture and rise only thanks to the meringue.
