Processed fish that is flavored and re-formed to make restructured seafood products. It’s typically made from Alaskan pollock, a Iean, mild, saltwater fish. The seafood product often is shaped into sticks, chunks, flakes or nuggets that resemble shellfish. Imitation crabmeat is the most popular product, but simulated lobster, shrimp and scallops also are made.
