Small, fragile, green leaves of the coriander plant. This herb also is known as Chinese parsley. Cilantro has a pungent, almost musty odor and taste that give a distinctive flavor to Mexican and other Latin American dishes, as well to Oriental cuisine. The flavor of cilantro is distinctively different from coriander seed, so the two definitely are not interchangeable.
