Ground meat comes from various parts of the animal (shoulder, loin, haunch, brisket). Most countries regulate the fat content of ground meat that is sold in stores. The greater the number of visible white pieces, the fattier the meat. Ground meat can cooked and served in a variety of ways, in both simple and elaborate dishes. It is a staple food in numerous countries. Common dishes made with ground meat include meatloaf, the American Hamburger, Greek moussaka, and Bolognese pasta sauce. Ground meat should always be cooked until it is no longer pink in the center and the juice it secretes is clear. Ground meat is very perishable because it is an ideal medium for the development of bacteria. It should be kept in the refrigerator no longer than 3 days, in the freezer no longer than2months.
