ASCORBIC ACID COLOR KEEPER

A granular mixture that includes vitamin C crystals (vitamin C also is called ascorbic acid) and sugar. It is used to keep peeled or cut fruits, such an apples, bananas, peaches and pears, from darkening when exposed to air. The dry color keeper usually is deluded with water before it is used.
