BROWN SUGAR

Brown sugar consists of sugar and molasses (a byproduct of the sugar making process). The percent of molasses present, which can reach 10% by weight, defines the classification into light or dark. Brown sugar naturally soft due to the nature of the molasses. Brown sugar not only sweetens but it enhances the browning and aroma of baked goods. It may also be used in sauces and marinades.
