POLENTA

Grainy flour produced from milled dried corn. It has been the food of the poor in northern Italy. Polenta is also the name of the dish that is made by cooking the cornmeal mush in simmering liquid until the grains soften and the liquid is absorbed. Can be eaten hot or cold, firm or soft. It may also be shaped and pan fried or grilled. It is an excellent accompaniment for braised dishes.
